I -HIGHLY- recommend keybinding a key or button to resetting your headset in the settings. Press F11 to toggle whether you see menus inside the headset or on your desktop. When you get a warning that the game isn't intended for VR just ignore it and press OK. When SteamVR is up and running look out of the headset and start ETS2 (or ATS) from the desktop library, not from inside the headset. Once connected click on the "Start SteamVR" button. In the Betas tab select the newest VR beta from the drop down menu (usually the first oftion on the list).

I thought you had to use "-oculus" since the Quest 2 is an Oculus headset, but this will lead to the game not working, so stick with "-openvr".
